GHT does Union Square Cafe Bar Nuts

Yes, I know everybody and really everybody has done this recipe.  It’s like the Kardashians of appetizers.  But this is a rare instance where overexposure is warranted.  Easy breezy killing it cocktail appy, and always garners great reviews from GHT guests (plus lots of inappropriate comments – you know who you are!!).  So you have to trot these out — on to the nuts!

The Prep:

  • Here is the general recipe.
  • As usual, substitute agave nectar for the sugar.
  • I obsessively redact the Brazil nuts.  Nothing against Brazilians, but I can’t stand for Brazil nuts.
  • No worries if you like bigger flecks, but I discipline the rosemary with the Santoku until it’s an herbal pixie dust.
  • After I toss in the spiced butter, I pop them back in the oven for just a minute more.
  • We like em’ spicy and sweet — taste after the second burn, while still hot add more cayenne and a drizzle more nectar if you feel the need.  Toss around a bit and serve.
  • They keep pretty well overnight in the fridge, just heat up again for about 5 mins @350°.

The Takeaway:

A perfect opening offering, something to nosh whilst guests accumulate in The Room and sip the first cocktail.

p.s. – Did I mention that I recently saw the Kardashians filming at the Hurricane Club?  The Hurricane Club has a rum fountain, which was much more interesting.  And if you order the whole pig it comes out with sparklers, as if the magical animal needed that.
