Flavor Fail: Beef Stroga-not

By on September 2, 2011

It’s not all roses and daisies here at GHT.  We have high expectations and need to bring it.  And once in a while, it happens.  The plan executed, the food lookin’ nice, the family hungry.   But then – the big fizzle.  It’s just not that good.

Street Corn. With Ska.

By on August 28, 2011

Fresh summer corn, grilled.  Cilantro, salty cheese crumbles, red onion, hot chili powder.  Juicy lime slice.  Get it?   A fun funky dish, tastes like a Sublime or Mighty Mighty Bosstones song.  So pop in some Ska and let’s get it on.
The Prep:

Blanch (boil very briefly) fresh shucked summer corn….

Greek-Style Lamb Sliders. Opa! (can i say that?)

By on August 19, 2011

There’s not much wrong with these sliders.  I mean really.   Toasted brioche roll, oregano-seasoned lamb, black olive tapenade, feta cheese, tzatziki, tomato slice, pickled red onions and mint leaves.  All in a 4-bite package.  We did these on a Saturday night up on the roof deck with some…

Bacon-Wrapped Roasted Medjool Dates. With song pairing.

By on August 13, 2011

Good reaction to last week’s post, bacon fat moves the collective soul.  So let’s reprise.  How about an appie this time …   But something on the DL, a little odd, a tad askew.  Is it an appie?  Or a dessert?  Sweet?  Savory?  Let’s mix it up.   Let’s…

Spicy Sword with Garlic Lime Butter

By on July 31, 2011

When I was little, once in a while dad would splurge on the swordfish.  Out on the back patio.  Grilled up over charcoal with a slice of lemon.   Whenever I get sword now, it still feels like a special occasion.   One of my favorites is Cajun style…

Sizzlin’ Summer Steak Salad

By on July 24, 2011

Sizzlin’ Summer Steak Salad!  Hmm.  Too much with the alliteration?  In any event, off we go.
The Prep:
The salad:

Wash/dry arugula.
Whack up all sorts of veg.

The dressing:

Most to least:  Olive oil, lemon juice, rice wine vinegar, dijon, honey, pepper, salt.  Emulsify.  Taste.  Adjust.

Workin’ the Weeknight Dinner – Broiled Old Bay Salmon

By on July 15, 2011

No post last week, people.  I was with my best man (btw- another jarhead) at Cathedral Ledge dealing with unfinished business – a climb called “Recompense” that we backed off of some 8 years ago.  Notwithstanding the disturbing belay stance atop the 3rd pitch – blood-soaked from a climber…

Arrrg. The Salty Dog.

By on July 1, 2011

Summertime cocktails.  Something light, a little sharp.  Cut right through that NYC humidity.   Maybe a Greyhound.  Hmm. Maybe some citrus salt on the rim.  Now that’s a Salty Dog.  Arrrg.
The Prep:
Do-aheads

Simple syrup.  Equal parts sugar and water, heated until the sugar dissolves.  Cool and funnel into a squeeze…
