For a number of years we’ve threatened to trot out the seven fishes for Christmas Eve, and this year we made it happen. Here’s dish numero uno – deviled eggs with salmon roe and a home-made purple fingerling potato chip. The chips were fun and easy-

Sliced very thin on a mandolin and quickly poached in simmering water with a pour of vinegar.  Then patted dry and quickly fried in 325º oil.  A throw of kosher salt and that’s it.  This dish was the second favorite of the evening.  The first coming up…
