Grilled Lamb Cutlets with Lemon and Fresh Oregano

Served these as like a gyro-thing.  In a warmed pita half with chunks of feta, chopped tomatoes, sliced red onion and shredded lettuce.  All topped with a nice garlicy tzatziki…

Pounded out the cutlets nice and thin, hit with S&P, garlic powder and some light olive oil.   Onto super hot grill just a couple minutes.  Finish off with a good squeeze of lemon juice, some more cracked pepper, a nice drizzle of extra virgin and then some fresh oregano.

Prep set-up for the grill pictured below…  Not a bad meal for a Monday!
