More Summer Food – Curried Chicken and Sweet Grape Salad

We call this one “Refrigerator Chicken Salad” – as in whatever’s in the fridge that day. Here it’s chopped leftover rotisserie chicken, diced celery and red onion. Some baby carrot rounds, quartered green grapes and chopped smoked almonds. With a good few shakes of curry spice and a touch of dressing to hold it all together. It’s all about the contrasts here — creamy, crunchy, salty, sweet, smokey….
For the dressing, keep it light – a bit of Dijon mustard and a small dollop of light mayo. Serve on mini-broiche rolls with pickles and chips:
