Seared Tuna Wasabi Burgers

You may recall our adventures with Salad for Dinner.   Well, we over-purchased on the tuna and there was a good steak and a half left over.  So this little number got itself together the following evening:

The Prep:

The fixins’:

  • Pickled ginger, boston lettuce leaves, sliced tomatoes.
  • Wasabi aioli – wasabi whipped into mayo, salt and white pepper.
  • Soy drizzle – soy sauce, sesame oil.
  • Buttered and toasted brioche bun.

The seared tuna:

  • Just like we did for the Salad Niçoise.
  • Pat steaks dry, coat with black and white sesame seeds, S&P.
  • Fast pan, drizzle of canola, kiss steaks each side – caramelized out, raw in.
  • Slice thin.

The Takeaway:

Americanized sushi.  Take a light, healthy ethnic dish and slap it on a toasted buttered bun with mayo. That’s how we roll.  USA!! USA!!! Next time I’ll thicken the soy/sesame drizzle, it was too loose for the burger thing.  Maybe whip it up with a bit of hot mustard.  Emulsify into a thick spicy sauce.  Nice.

p.s.  So OWS still hasn’t toppled any major Wall Street institution (though it seems Greece may).  But they are doing a number on the small businesses we have down here.  Other than that, no real big news from ‘occupied’ Downtown NYC.  Irrelevancy awaits?

      i have some ideas on this one – it involves roasted red peppers, garlic, olives and artichoke hearts – more to come….
