Edgy Bunny Ginger Carrot Easter Soup

Nice Easter Bunny likes carrot soup.  Edgy Easter Bunny adds a burn of fresh ginger. Garnishes with crispy fried carrot shaves.  And serves with savory gorgonzola fig shortbreads.  We prefer us some Edgy Bunny.

The Goods:

  • 1 bag carrots, peeled and chopped
  • 1 medium chopped yellow onion
  • 2 T butter
  • 3 T peeled chopped fresh ginger
  • 1 box chicken stock, 1 in reserve
  • 1 C heavy cream
  • Kosher salt and cayenne pepper

The Execution:

Melt butter.  Onion and carrots in, let it go for a bit.  Ginger in.  Let it go a bit more.  Add box of stock, simmer a while until carrots yield.  Hit with blender.   If too thick, add more stock.  If too thin, let it reduce a while.  A pour of cream, a pinch of the cayenne.  Salt to taste.  

Garnished with crispy fried carrot shaves:  Take a peeled carrot and peel away into nothing.  Drop the peels into 350º peanut oil until the sizzling subsides. Remove, throw salt over.
