Seared Spiced Pork Tenderloin and Sweets

Pork tenderloins – marinaded in a heady brine, seared on the stovetop and finished in a fast oven.   Sweets on the side, simply prepped with salt, cracked pepper and oil.  Thick rounds, roasted until a light char starts around the edges.  A throw of flaked sea salt over the party.  Enjoy with a nice Pinot Noir.  Tight.

For the marinade, boil some water and stock a while with a LOT of cracked pepper, some bay leaves, smashed garlic, brown sugar and salt.   Maybe some sort of booze if that is feeling right.   Cool with a handful of ice.  Slide the tenderloins in for a good few hours and let them enjoy the bath.
