Rub a trimmed pork shoulder with salt and sugar, braise in a covered pot with about an inch of stock at 225º for a few hours until it all collapses. Shred with forks, spread out on a sheet pan. Sprinkle some brown sugar over, massage in with your fingertips. Into a 500º oven for 10 mins to brown and caramelize everything.
Pork into a leaf of butter lettuce (a/k/a Boston or bibb). Top with scallions, kimchee and Hoisin sauce.
