More Summer Food – Curried Chicken and Sweet Grape Salad

By on July 20, 2013

We call this one “Refrigerator Chicken Salad” – as in whatever’s in the fridge that day.  Here it’s chopped leftover rotisserie chicken, diced celery and red onion.  Some baby carrot rounds, quartered green grapes and chopped smoked almonds.  With a good few shakes of curry spice and a touch of dressing to hold it all together.  It’s all about the contrasts here — creamy, crunchy, salty, sweet, smokey….

For the dressing, keep it light – a bit of Dijon mustard and a small dollop of light mayo.  Serve on mini-broiche rolls with pickles and chips:

These are the two primary chicken curries I use:

Shaan Tandoori Chicken powder – this is the red powder that gives Tandori chicken or chicken tikka that special flavor and color.
Shaan Chicken Curry powder – this has a nice flavor and some heat.

    And of course:

Garam masala – This is the universal curry powder used in Indian food. Does not contain heat.
