Herb-Stuffed Roasted Tenderloins

By on February 18, 2014

Here’s a real treat – perfect for a big family meal.  The pics are from the holidays…

Step 1 – butterfly the tenderloin roast (or have your butcher do it), and smear the inside with an herb paste – here I used chopped fresh tarragon, parsley, thyme and rosemary mixed…

Sunday Spice-Rubbed Pork Roast

By on February 10, 2014

Rub roast lightly with canola oil, then coat with S&P, garlic powder and hot Hungarian paprika (smoked would also be good).  Let sit outside the fridge for a good hour…

Seared Bone-In Pork Chops and Shishitos

By on October 19, 2013

Whack this out in a flash on a Friday evening after work — pan-seared pork chops, blistered shishitos.  With rice or garlicy mashed potatoes.  Pour out a chilled Gruner Veltliner.  And call it dinner:

Take the chops out of the fridge right when you get home – letting meats come…

More Summer Food – Curried Chicken and Sweet Grape Salad

By on July 20, 2013

We call this one “Refrigerator Chicken Salad” – as in whatever’s in the fridge that day.  Here it’s chopped leftover rotisserie chicken, diced celery and red onion.  Some baby carrot rounds, quartered green grapes and chopped smoked almonds.  With a good few shakes of curry spice and a touch…

Crispy Sage and Toasted Hazelnut Butter Sauce

By on June 25, 2013

Well here’s a departure from the usual red sauce with ravs.

Crisp up the sage leaves in some melted butter and olive oil.  Gently remove the leaves, add chopped hazelnuts to the pan.  Toast hazelnuts until fragrant and a bit browned.  Add in your ravioli, cooked just under and…

Cornbread with Cinnamon Whip

By on May 5, 2013

Page 777 of my Joy of Cooking is really thrashed.  That’s where you’ll find the cornbread recipe.  I like the “Northern” version, but haven’t committed measures to memory.  And so there’s a healthy powdering of flour and cornmeal on that particularly mangled page.  Recently we’ve been serving our cornbread…

Chicken Parm – Hello, 1989

By on January 12, 2013

It’s been a while since we trotted out an 80’s dish.  But high time to crank up the Whitesnake, peg-leg the jeans and Safety Dance our Adidas Sambas into the kitchen. Add me a mohawk with braided rat-tail and it’s Framingham North High again, circa 1989.  And chicken parm?…
